They say that necessity is the mother of invention — this certainly seems to be true when it comes to SL and finding things to do, places to take screenshots at.
Last night, I ended up visiting a sim called Yule, which seemed rather season-appropriate (part of an estate that also had Samhain, Beltane etc., BTW). It was an Adult-rated sim, so I wasn't sure what to expect, but I was pleasantly surprised when it turned out to be quite beautiful (the corner I visited, at the very least).
The above is the place where I arrived; a quiet little seashore with a bit of beach, waterfalls and so on. Interestingly, this also turned out to be one of the few places that looked better without lighting/shadows enabled — sure, you don't get shadows from the trees etc. here, but overall the picture nonetheless looks nicer, with better-looking water etc.
There was a meadow near by, too:

Quite lush, and perfect for ponies. :) I did enable lighting/shadows here after all; it makes part of the meadow a littler darker and shadier, but it otherwise looks quite nice.
The only thing that I thought could really be improved here were the trees: relatively simple "intersecting planes" models that don't look very realistic at all once you actually focus on them. I've seen much better trees on SL in the past.
I'm not sure what the glowy globe in the distance is, but perhaps we'll check it out some time.
